Cheese Scones
These light and fluffy Heritage Teifi/Extra Mature cheese scones are easy to make and perfect for an afternoon tea or as part of a picnic. Great served alongside soups or warm with melted butter. Heaven.
Makes 8-10 scones
Ingredients
225g self raising flour
1 level tsp baking powder
40g butter softened
1 egg
150ml milk
100g grated Heritage Teifi/Extra Mature
2 large tsp English mustard
Salt and pepper
Method
Mix the flour and baking powder into a bowl, then rub in the butter until the mixture resembles fine breadcrumbs.
Lightly whisk the egg in a measuring jug, and then add the milk. Add grated Heritage Teifi/Extra Mature, English mustard and salt and pepper to the egg, then add to the flour and mix lightly into a soft dough.
Turn out and knead on a lightly floured surface. Roll out 1/2 thick and cut into rounds with a 2inch straight cutter. Arrange on a cold greased plain tray, then brush the tops with a little milk.
Bake scones at 200 fan oven for 10-12 mins or until pale golden brown, then leave to cool on a wire rack.
