Courgette Parmigiana - Heritage Teifi/Extra Mature
This Italian dish combines our Extra Mature Heritage Teifi with courgettes and a light tomato sauce, creating a delicious vegetable dish with a real depth of flavour. Great served with a fresh dressed salad or other greens.
Serves 4
Ingredients
1 onion
2 garlic cloves
3 sprigs of oregano (or use dried)
2 tins chopped tomatoes
A splash of white wine vinegar
1 bunch of fresh basil
2x courgettes
200g Heritage Teifi or thereabouts
Salad leaves or other greens
Method
Slice your onion and crush and slice your garlic. Chop 3 sprigs of oregano (or use dried) and add everything to a medium heat pan with 2 tbsp olive oil.
Once the onions have turned translucent, add 2 tins chopped tomatoes. Let it come up to boil, then simmer for around 15 minutes.
Add a splash of white wine vinegar to intensify the flavour. Season with salt, pepper and basil.
Slice the courgettes into discs, fry on both sides using a medium to high heat with a little olive oil until browned.
Grate the Heritage Teifi.
Just like lasagne, layer the tomato sauce thinly, add Heritage Teifi, and then courgettes. Repeat and finish with a layer of Heritage Teifi, add a layer of herby bread crumbs and bake at 180 degrees for 20 minutes or until golden brown.
Serve with a dressed salad or other greens of your choice.
